Hi Friends!

You’d think that because green bean is in the title of my blog, that I like them any which way, right? Not so. In fact, I’m crazy picky about green beans. I only like them if they’re still crunchy and most of the time I’d rather eat them cold not warm. And I cannot STAND mushy green beans.

Hubby, on the other hand, prefers them a little more well done. And he’s a huge fan of green bean casserole at Thanksgiving. You know, the traditional Campbell’s recipe? Well, this year I set out to make a healthier version that hubby would still eat!

A completely homemade, lightened up version of your favorite Thanksgiving casserole.

Ingredients

Scale

  • 2 Tablespoons butter
  • 2 cloves garlic, minced
  • 1/2 cup onion, diced
  • 1 cup mushrooms, thinly sliced and diced
  • 3 Tablespoons white whole wheat flour
  • 1.5 cups skim milk
  • 2/3 cups plain greek yogurt
  • 1/2 teaspoon salt
  • 3/4 teaspoon onion powder
  • 3/4 teaspoon garlic powder
  • black pepper, to taste
  • 212 ounce bags frozen green beans
  • 1/4 cup Parmesan cheese, grated (optional)
  • 1/4 cup Panko breadcrumbs

Instructions

  1. Preheat oven to 350 degrees F.
  2. Melt butter in a large saucepan.
  3. Add garlic, onion and mushrooms and saute 5-7 minutes.
  4. Add flour and stir well.
  5. Slowly add milk, stirring constantly to avoid clumping.
  6. Add yogurt and seasonings, reduce heat and let simmer 5-10 minutes until thickened.
  7. Cook green beans according to package directions (in microwave or on the stove. Drain excess water).
  8. Add green beans to sauce and stir to combine.
  9. Pour into a casserole dish. Top with parmesan if desired. Sprinkle with breadcrumbs.
  10. Bake at 350 for 30 minutes.

Give it a try, friends! It’s pretty simple and it passed the hubby test 🙂

I actually put some cayenne pepper in hubby’s version because he likes things spicy, but I know that’s a departure from the traditional.

    I started making a homemade version of this beloved casserole about 6 years ago when we got married. I couldn’t bear one more holiday with the yucky canned stuff!! My recipe involves homemade cream of mushroom soup as the base (lighter version) then blanched haricot verts folded in, and I use the crunchy onion pieces from TJ’s to top with. They have much less junk in them than the traditional brand. One year I made my own onion topping, but decided that in the end, they tasted so similar, it wasn’t worth the extra effort.

    I don’t think I’ve ever actually had a green bean casserole! I’m not sure if it’s an American thing, or what. My uncle steams them, then saute’s with garlic and parmesan – pretty fabulous.
    Favourite Thanksgiving side dish – my mom’s maple-glazed baby carrots!

    I am so excited to try this recipe!!
    My favorite Thanksgiving side dish is either baked pineapple or sweet potatoes (both are loaded with sugar, the sweet potatoes is a totally different recipe than most are used to).

    Green bean casserole is my favorite Thanksgiving side dish – hands down! I love that you’ve made a healthier version, but one that’s still almost as simple as the regular recipe (you know, pour in a cup of cream of mushroom soup and stir).       I haven’t tried it with any other kinds. It’s just to thicken the sauce. You could try cornstarch or another flour that you’re familiar with that you know has some thickening properties

    hehe maybe thats why you’re the “LEAN green bean”?? 🙂 But no I’m the same! I love mine crunchy and just lightly steamed..But this is such a great recipe for those liking this typical creamy dish!
