Today was the perfect day to make soup, so that’s exactly what I did. It turned out to be the best lazy chicken noodle soup, and it was just what my soul needed! It’s Lazy Chicken Noodle Soup for the Soul!

Where do you start?

I started by buying a pre-cooked chicken and chilled it overnight. It’s important to firm up the bird by cooling it, and it makes it easier to pull apart.

You don’t need the breast meat, so save that for another easy meal. Lesa has a chicken wrap recipe that would be perfect for using up the breast! Maybe I can convince her to share! I use everything else for the soup, except the skin. I find that by not using the skin, your broth doesn’t get oily.

You can remove the larger pieces of meat and set aside to toss in towards the end to ensure you keep the chicken’s texture. I just threw the entire thing into my Instant Pot! If you don’t have an Instant Pot yet, I highly recommend them!

Add water to just below the max line, add a bouquet garni and bay leaf. What’s a bouquet garni? It’s a blend of herbs used in French cuisine. It’s fun and easy to make your own! Lesa happens to have a great recipe! Bouquet Garni.

I also threw in some dill I had in the freezer. You use what you’ve got!

Set your pressure cooker to 30 minutes. Once done, let it release naturally and the strain off to separate the broth from the solids. Don’t accidentally pour the broth down the drain; you need that stuff!

Now, this is where it gets tedious. You have to pick through the carcass for the meat. Discard the cartridge and bones, as well as anything you don’t want to eat. I turned on Dr. Laura and listened to a mother who called in wondering if she should buy her sexually active teenage son condoms, or just let him buy it with his pocket money. After rolling my eyes so hard that I thought I was going to have a stroke, sorting was complete.

OK, here’s where I get even lazier! You’ll love it!

I bought a frozen bag of onions and a bag of mixed diced vegetables. This one had onions, carrots, celery, and peppers. Perfect for soup. It was the best $2 I’ve ever spent! Not having to chop all those veggies is a real time saver!

I sauteed the vegetables in olive oil until the onions became translucent. Then I added a couple of tablespoons of Better than Bullion for an extra kick of flavour! If you haven’t tried this, you should. It’s an easy way to add flavour to your meals!

I added the green peas, pasta and chicken during the last 4 minutes as not to overcook. If you decided to remove most of the chicken from the bones before throwing the carcass in the pot, you would add it now.

Serve with some nice crusty bread and butter and enjoy.

PS: in case anyone is wondering if she should buy the condoms or not, the answer is ABSOLUTELY NOT!

Hearty chicken noodle soup that take no time or effort! Great for those lazy fall days!

Ingredients

  • 1 cold rotisserie chicken, (you don’t need the full chicken)

  • 4 litres cold water

  • 1 bay leaf

  • 1 bouquet garni

  • 2 tbsp olive oil or butter

  • 2 cups frozen onions

  • 2 cups frozen mixed diced vegetables of your choice

  • 2 tbsp Better Than Bouillon

  • 1 cup frozen green peas

  • 1 cup small uncooked pasta of your choice

Directions

  • Remove most of the meat from your cold chicken. You won’t need the entire chicken, so save the breast for another recipe. Discard the skin.
  • Toss the bones into the Instant Pot with enough water to bring it close to the max line (approximately 4L). Add the bouquet garni, and the bay leaf and pressure cook on high for 30 minutes. Let the pressure release naturally.
  • Strain the broth into a large bowl. It will be added back to the soup later.
  • Sort through the chicken bones saving any usable meat. Discard the rest.
  • Using the saute setting on your Instant Pot, Saute the onions and diced vegetables until the onions are translucent.
  • Add the Better Than Bullion, broth, and chicken. Bring to a boil.
  • Once your soup reaches the boiling point, add the Pasta and Peas and cook for 4 minutes.
  • Season with salt and pepper to taste

Notes

  • This recipe can be prepared in a pot as well. Just increase your initial cook time from 30 minutes to about an hour, or even longer if you have time.
