Step 1: Make the dough

Combine the flour, powdered sugar, vanilla sugar and salt in a bowl. Add the butter in small pieces and knead into a smooth dough (add 1-3 tablespoons of cold water if necessary). Shape the dough into a flat ball, wrap tightly in cling film and place in the fridge for approx. 30 minutes (or overnight).

Step 2: Shape love letter cookies

Remove the ball of dough from the fridge and roll out to a thickness of approx. 3 mm on a lightly floured work surface. Cut the dough into equal squares using a knife or a pizza roller and cut out small hearts from the scraps of dough. Spread about 1-2 teaspoons of jam in the middle of the squares and moisten the corners with a little water. First fold the bottom corner towards the center. Then fold the outer corners inwards and finally seal the center with a pastry heart.

Step 3: Bake the cookies with jam

Place the love letter cookies on a baking tray lined with parchment paper, leaving a little space between them. (Optional for more shine and color as a vegan egg wash substitute: Mix some dairy-free milk or cream with turmeric and brush the cookies with it). Bake the love letter cookies at 356 °C (180 °C) for approx. 12-15 minutes (depending on size) until lightly golden brown. Then leave to cool completely. Ingredients

  • 2 ½ cup (g) flour all-purpose wheat or spelt flour
  • 1 cup (100 g) powdered sugar
  • 2 tsp (8 g) vanilla sugar or ¼ tsp ground bourbon vanilla
  • 7 oz (200 g) vegan butter
  • 3-4 tbsp jam e.g. strawberry, raspberry or cherry jam without pieces

  • Combine flour, powdered sugar, vanilla sugar and salt in a bowl. Add the butter in small pieces and knead into a smooth dough (add 1-3 tablespoons of cold water if necessary). Shape the dough into a flat ball, wrap tightly in cling film and place in the fridge for approx. 30 minutes (or overnight).

  • Preheat the oven to 356 ℉ (180 °C). Line a baking tray with parchment paper.

  • Take the dough ball out of the fridge and roll out to a thickness of approx. 0.1-inch (3 mm) on a lightly floured work surface. Cut the dough into squares of the same size using a knife or pizza roller and cut out small hearts from the scraps of dough.

  • Spread about 1-2 teaspoons of jam on the center of the squares and moisten the corners with a little water. First fold the bottom corner towards the center. Then fold the outer corners inwards and finally seal the center with a pastry heart.

  • Place the love letters on the prepared baking tray, leaving a little space between each. (Optional for more shine and color: Mix some plant-based milk or cream with turmeric and brush the cookies with it).

  • Bake the love letter cookies for approx. 12-15 minutes (depending on size) until lightly golden brown. Then leave to cool completely.

  • Dust with powdered sugar as desired and decorate with Lovely Sprinkles. Enjoy!
