Here in Atlanta, there is an iconic restaurant called The Varsity. One of my favorite things to get there is the chili slaw dog. I remember as a little girl going to eat there before going to see the Atlanta Braves game. It’s one of the only fast food places that still has a car hop and every kid get’s a famous Varsity hat if they want one. When you walk into The Varsity Restaurant you are greeted at the register with “What’ll ya have? What’ll ya have” What’ll ya have?” Just to give you a taste of what I mean click this video.

They also developed their own lingo for ordering food items if you go in and order a hot dog it won’t be plain, it will have chili and mustard on it. Here’s a little video I made for you to explain:

Visiting The Varsity for someone in Atlanta is a true adventure and a rite of passage. I’ve recreated what I think is the closest you can get to the hot dog chili they use so you can make your own at home. Ingredient List

  • 1 lb ground beef
  • 10 oz can tomato sauce
  • 1/2 cup ketchup
  • 1/2 tsp chili powder
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • dash Worcestershire sauce
  • 1/4 tsp each salt and pepper
  • 1 tbs brown sugar
  • 2 tbs yellow mustard

Directions

  1. In a saucepan brown ground beef

  2. Add the rest of the ingredients and simmer on low for 20 minutes

  1. A little about the history of the restaurant. Owned by Mr. Frank Gordy, not the original but second location, the first being located to UGA in Athens Ga. and to my knowledge is still in operation in the building in Athens,Ga. The Atlanta location was built close to Ga.Tech and Frank Gordy owned and operated one of the leading tire companies which was across the interstate from the varsity. Later a spin off of the varsity came the Varsity Jr. located on Monroe Drive at the Chesirebridge intersection. Later came another Varsity which was on Jimmy. Carter Blvd. at intersection of I85. I believe I am correct in saying this location belonged to the daughter.The original two restaurants were best noted for their drive inn facilities and the personell, the two I best remember were Popeye and Fossie Mae who were hilarious in both their dress and wit.All the drive inn personnel actually paid for the privilege of working as car hops, however they made a lot of money and later became icons of the Varsity organization. Their motto what'll ya have has always been around as long as I can remember. The menu to my recollection has always been the same.My favorite was 2 chili dogs 2 chili steaks an order of onion rings a fried apple pie, best ever, and a varsity orange drink or varsity orange shake.This has been a part of my history and sure many others.

    1. You are absolutely correct, my grandfather bought the tires for 53 milk trucks(W O Pierce Dairy in Chamblee Ga. I knew Frank from the tire business, however although he owned the Varsity he was never one to interfere in the resturant. He depended on his loyal employees many of which retired from there or either passed away while employed there. Frank Gordy Jr.owned the Varsity Jr. but approximately 10 or so years into the business he committed suicide. Frank Gordy Jr. sister however went on to open the resturant at I85 and Jimmy Carter Blvd. Has done really well following in her dads footsteps. Wonderful people and Frank Gordy senior was a great friend to our family. He has been greatly missed over these years of my life
